VALENTINE COOKIES!

Because Jorge had to work on this, our most important holiday ; ) I made him cookies.  And because I have no name for them, we'll call them Valentine Cookies!  I had bigger and better intentions, but didn't buy a heart-shaped cake pan in time, couldn't find heart-shaped cookie cutter, and really, give the man a cookie and he's happy.  He probably never noticed they were round.  LOL  

The inspiration for these came from something  I read last year on Christy Jordan's Southern Plate.  She explained that she buys all the Christmas M&M's after the holidays for half price and saves the red ones for Valentine's Day and the green ones for St. Patrick's Day.  By the time I read that, it was too late, but I filed it away in my memory until this year.  This year, I hit Walgreen's with a vengeance!  Now I have more M&M's than I know what to do with.  But at least I'm stocked for a chocolate emergency.  ; )  Anyway, last year, I tried her cookie recipe with great success and I may make another batch in a day or two, but first, let's look at what I did this year.

VALENTINE COOKIES

2/3 c butter, softened
3/4 c sugar
1 tsp baking powder
1/4 tsp Kosher salt
1 egg
1 Tbsp milk
1 tsp pure vanilla
2 c all-purpose flour
Red M&M's

In a large mixing bowl, beat butter on medium speed for 30 seconds.  Add sugar, baking powder, and salt.  Beat until combined.  Beat in egg, milk, and vanilla until combined.  Add flour and beat until well combined.

On a lightly floured surface, roll the dough using a rolling pin sprayed with Baker's Joy® non-stick baking spray with flour . Roll cookie dough until 1/4 inch thick.  Cut dough using cookie cutter.  Place 1 inch apart on an ungreased cookie sheet.  Bake at 375 degrees for 7 minutes.  Remove from oven.  Place one M&M in the center of each cookie.  Put cookies back into oven for 2-3 minutes.  Remove; transfer to wire rack and let cool.



First:  Did I tell you I don't have a round cookie cutter?  Well, I don't.  I used an egg separator.  See how nice and round it is?  And the cookie dough just pops right out.  Really.  And the Christmas M&M's I bought are Cherry Cordial flavor.  I don't know if they're still available in that flavor, but they are wonderful!  Stock up if you find them anywhere.  If you want your M&M's to melt into the cookie, leave them in the oven another minute or so.  I prefer mine to retain their original shape.
