WILD GAME TUESDAY-ELK STEAK SMOTHERED IN ONIONS

Lately, I've been trying to organize the way I do this blog, rather than the wait and see method I used at first.  Thanks to all the information I've acquired from books, websites, and, well, just reading other people's blogs, I've learned a little over the past year.  So, I've decided to try Wild Game Tuesdays for awhile.  Although SuperHubby doesn't hunt, and I would pass out if someone handed me a dead animal and asked me to prepare it, I know that a lot of people hunt and fish, not just for sport, but to actually feed their families.  Some of my family in Kentucky are like that. I come from a long line of hunters and fishermen, and I want to honor that.  So, as long as I can find recipes, Tuesdays will be designated for wild game recipes.  Besides, as you may already know, I'm a rabid Kentucky WILDcats fan, and during the regular BBall season, they usually have a GAME on TUESDAY.........

ELK (or VENISON) STEAK SMOTHERED IN ONIONS

1 1/4 lbs steak, about 3/4 -inch thick
1 3/4 tsp salt
black pepper, to taste
2 Tbsp butter
1 1/4 lbs onions, sliced

 Trim off all fat from steaks and discard.  Season steak with salt and pepper.  Brown slowly on both sides in hot butter.  Add sliced onions, reduce heat, cook 15 minutes.  Turn steak once and carefully stir onions occasionally.  Serve at once for best flavor

Serves 2 -3
