WILD GAME TUESDAY - SWISS ELK OR VENISON ROUND STEAK ~ The Self-Taught Cook™

Good morning! Welcome back to Wild Game Tuesday. Today's post is dedicated to the memory of my uncle, Rev. Jimmie Moore, who passed away Sunday. My uncle loved to hunt and fish, and his family was fed many times because of this. He also went frog gigging and knew how to find edible mushrooms in the forest, but that's another post. Anyway, I'm willing to bet there is no hunting in Heaven, but I do hope there are animals and forests, so that he'll feel at home.

On a completely different note, I was told by Brian and Buffy (Class of '82!) that my Slow Cooker Guinness Beef Stew can be made using 1/2 beef and 1/2 venison, or deer meat. And since we have learned that venison and elk are interchangeable, that means that if you have elk in your freezer, you too can make this beef stew. Thank you Brian and Buffy. :)

And here is today's offering....

SWISS ELK OR VENISON ROUND STEAK

Meta Given's Encyclopedia of Modern Cooking Vol. 2, 1969, Doubleday

2 round steaks, cut about 3/4 in. thick, about 1 1/2 lbs

1/4 c flour

2 tsp salt

1/16 tsp pepper

1/4 c butter

1 c water

1 med. onion, chopped

1 c diced celery

1/2 c sour cream

Combine flour, salt and pepper and pound well into the steak. Brown both sides of steak and any remaining seasoned flour slowly in the heated butter. Add 1/4 c of the water. Cover and simmer slowly, adding the rest of the water as needed. When the meat is almost tender (1-2 hrs), add the onion and celery and cook until thoroughly tender. Stir in the sour cream and cook for 2 minutes longer. Serve at once
