Pollo Frito (Fried Chicken)

Pollo Frito (Fried Chicken)
adapted from "Rice and Beans and tasty things" by Dora Romano


6 chicken thighs, bone-in and skin on
6 garlic cloves
1/4 tsp dried oregano
1/4 tsp black pepper
2 tsp olive oil
1/2 packet Goya Sazon
4 c vegetable oil


Place garlic, oregano, pepper, and olive oil in food processor.  Blend together.  Rub on chicken pieces and under chicken skin.  Pour Sazon over chicken pieces and rub into skin.  Heat oil in deep cast iron skillet.  Place chicken in skillet.  Fry at medium heat 5 minutes on each side.  Lower heat, cover and cook 10 minutes on each side.  Remove cover, raise heat, and cook until golden brown.
