October is just chock full of great food holidays! The second week of the month, this week in other words, is National Pasta Week. Now, I know that carbs have been given a bad rap in the dieting world, but it's really all about moderation.
This month is also a great time to start using all of those great soup recipes. Fall is here; there's a crispness in the air; and you've started pulling on a sweater when you go out. So, how about serving a nice, hot bowl of pasta soup tonight? Here is a repost of my Easy Tortellini Soup recipe:
5 cups chicken stock
2 packages (13 ounces) frozen cheese tortellini
1 can cannelini beans
1 can Italian diced tomatoes
1 1/2 teaspoons dried basil
1 tablespoon red wine vinegar
Parmesan cheese and coarsely ground pepper, optional
Stir in the beans, tomatoes and basil. Simmer, covered, for 10 minutes or until pasta is tender. Stir in the vinegar.
In
a 5-qt. stockpot, bring chicken stock to a boil. Stir in tortellini.
Reduce heat; simmer, uncovered, for 4 minutes, stirring occasionally.
Sprinkle with Parmesan cheese and pepper if desired.
