Well, it seems that Jorge (SuperHubby) has accepted his role as weekend guest chef and is enjoying it immensely. He comes up with a new marinade each week. This Saturday, he made Hickory Smoked Pork Ribs, and they were, as usual, awesome. They had just a mild smoky flavor with a hint of sweet and a hint of salty. Perfect combination. So here they are!
Costillas de Cerdo Ahumado Hickory (Hickory Smoked Pork Ribs)

Hickory wood chips for smoker
2-3 lb. pkg. Country Style Pork Ribs
1 tsp Kosher salt
2 Tbsp. Goya® Adobo con Pimiento
2 tsp ground ginger
1 tsp chili powder
3 tsp soy sauce
2 tsp sweet 'n' sour sauce This is how you make the neighbors hungry! |
Place ribs in plastic container (like Tupperware). Mix salt, Adobo, ginger, and chili powder. Rub on ribs thoroughly. Mix soy sauce and sweet 'n' sour sauce and pour over ribs. Marinate in refirgerator for a minimum of 1 hour. Smoke for 4 hours until done.

BTW, I served the ribs with my Coca-Cola Baked Beans. I admit though, the potato salad came from the deli. My get-up and go just got-up and went! : )
