Besides being National Rice Month, September is also National Chicken Month. Now, I can't speak for everyone else, but we eat a lot of chicken at our house. It's healthier than red meat or pork, and it's versatile. You can cook chicken so many different ways!
Recently, our niece had enough of a cranky ol' rooster, and chop! chop! Richard was dinner. I was, as I have told many people, oddly proud of her. It's not every young woman who can kill a chicken. To be honest, if I had to kill my dinner, we would be vegetarians.
Fortunately for SuperHubby's palate, I'm not required to kill dinner. As long as Publix and Kroger are open, we'll be okay. Here is one of our favorite recipes:
CHICKEN PARMESAN
1 egg 1 can tomato soup
2 Tbsp water ¼ C water
2 lb. chicken parts ¼ C chopped onion
½ C seasoned bread crumbs 1 Tbsp oil
½ tsp each: basil, garlic powder,
shredded mozzarella, oreganoBeat egg plus 2 Tbsp water. Roll chicken in egg mixture, then in crumbs. In a large frying pan, brown in 1 Tbsp oil. Stir together soup, water, onion and seasonings. Place chicken in baking dish; pour sauce over chicken; top with mozzarella. Bake in preheated oven at 350 degrees until cheese melts.
