SLOW COOKER SWEET AND SAVORY POT ROAST
2 1/2 -3 lb rump roast
6 carrots, peeled
6 potatoes, peeled
2 stalks celery, cut in half
1 bay leaf
1/2 c brown sugar
1/2 c apple cider vinegar
1/4 c soy sauce
1/8 tsp salt
freshly ground black pepper, to taste
1 c vegetable stock
2 1/2 -3 lb rump roast
6 carrots, peeled
6 potatoes, peeled

1/4 c soy sauce

1 c vegetable stock
Place roast in slow cooker. Put potatoes around the roast and carrots and celery on top of the roast. In a bowl, whisk together next seven ingredients. Pour over roast and vegetables. Cook on HIGH for 4 hours.
