BAKED LEMON HERB TILAPIA

Well, as much as I love soup, I thought three days of soup might be pushing it too far, so today we took a break from the soup.  Not to worry, though; there are plenty of soup recipes lurking on my computer just waiting to get out.  :)  

But today seemed like a good day for baked fish.  We haven't had it lately, and it's not only delicious, but a totally guilt-free dinner.  That doesn't happen every day, but it's nice when it does.  And the nice thing about this tilapia recipe is that it went so well with my Garlic Sauteed Asparagus and Brown Rice Pilaf.  Another simple, healthy meal!

Baked Herb Tilapia

4 Servings
Prep: 20 min. 
Bake: 15 min.

Ingredients
2 tablespoons minced fresh parsley
1 teaspoon salt
3/4 teaspoon paprika
1 teaspoon fresh thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon pepper
4 catfish fillets (6 ounces each)
2 tablespoons lemon juice
1 tablespoon lime juice
1 tablespoon butter, melted
1 garlic clove, minced

Directions
•Combine the first seven ingredients; sprinkle over fillets on both
sides. Place in a greased 13-in. x 9-in. baking dish. Combine the
lemon juice, butter and garlic; drizzle over fillets. 

•Bake, uncovered, at 350° for 15-20 minutes or until fish flakes
easily with a fork. Yield: 4 servings. 

While I was cooking, I listened to music on Pandora.  Gotta love it!  I'm always hearing something different.  This is one of the new (to me) songs they were playing today.
