Before anyone thinks they're experiencing deja vu all over again, I admit it. This is my third recipe for red beans and rice. What can I say? We really like red beans and rice. There is a difference this time. Before, they were slow cooker recipes. But, for once, I cooked them on the stove instead. And you probably didn't think I could even find it.
EASY STOVETOP RED BEANS AND RICE
Serves 4
Olive oil cooking spray
14 oz. package Smoked Sausage, sliced into 1/2" pieces
1 small onion, minced
1 clove of garlic,minced
¼ c diced green pepper
¼ c Cajun seasoning
15.5 oz. can of kidney beans, undrained
1 15.5 oz can diced tomatoes
dash of hot sauce
Kosher salt, to taste
Freshly ground black pepper, to taste
Spray medium size cast iron skillet with cooking spray. Saute garlic, green pepper, Cajun seasoning and onions about 2 minutes. Add smoked sausage; stir for 2 minutes. Add beans, tomatoes, salt, pepper, and hot sauce. Bring to just before boiling, lower heat, cover and simmer for about 25 minutes. Serve with or over white rice.
