Well, it's Thursday again; time for another low carb recipe. And since I'm in a chicken mood this week, we're having Lemon Mustard Chicken. I was so happy to find a chicken recipe that would fit the low carb category, and I have to tell you that it really is delicious. The combination of lemon and mustard gives it a nice zing so that it's easy to forget that you're eating healthy food. That's the way I like it!
LEMON MUSTARD CHICKEN
Adapted from Better Homes and Gardens New Cookbook
5-6 bone-in chicken thighs
2 Tbsp vegetable oil
1 Tbsp Dijon mustard
1 Tbsp lemon juice
1 1/2 tsp lemon-pepper
1 tsp oregano
1/8 tsp ground red pepper
Olive oil cooking spray
Spray baking sheet or broiler pan with cooking spray. Place chicken, bone side up on the baking sheet. Broil about 20 minutes. Mix vegetable oil, mustard, lemon juice, lemon pepper, oregano, and red pepper in medium size bowl. Brush mustard mixture onto top side of chicken. Broil additional 5 minutes. Turn chicken and brush with remaining mustard mixture. Broil 15 minutes or until juices run clear.
