LOW CARB THURSDAY - STEAMED KALE WITH BALSAMIC VINAIGRETTE

STEAMED KALE WITH BALSAMIC VINAIGRETTE

adapted from "The Weight Watchers Complete Cookbook & Program Basics, 1994 


2 tsp olive oil
1/2 onion, diced
1 garlic clove, minced
1 Tbsp balsamic vinegar
1/2 tsp Dijon mustard
4 c chopped kale, steamed

pinch of Kosher salt
Freshly ground black pepper, to taste

In large skillet (I used a cast iron skillet, of course) heat oil to medium heat and saute onion and garlic.  Stir frequently.  Add 1/4 c water, vinegar, and mustard.  Cook, stirring constantly, for one minute.  Add steamed kale to skillet; mix well.  Add salt and pepper and mix well again.
