1 dressed rabbit, 1 1/2 lbs
2 c cold water
2 tsp salt
1/4 c butter, melted
4 tsp grated onion
1 tsp salt
1/8 tsp pepper
1 tsp sugar
1 Tbsp lemon juice
1 tsp Worcestershire sauce
1/4 c water

Start broiler 10 min before baking; set to 350 degrees.  Clean and wash the rabbit thoroughly.  Cut into serving pieces.  Place in bowl, cover with cold water and add salt.  Soak 1 1/2 hrs.  Drain and pat dry with absorbent paper or cloth.  Melt butter in saucepan, remove from heat, add remaining ingredients and beat thoroughly.  Dip rabbit pieces in sauce and arrange on aluminum-foil-lined shallow pan and place under broiler 3 inches from source of heat.  Broil 30 minutes, basting with remaining sauce every 10 minutes.  After top side is well browned, turn rabbit, increase heat to 375 degrees, and broil another 40 minutes, basting frequently.  Then raise heat to 400 degrees and broil 15 minutes so that meat browns richly.  Remove to platter; pour remaining sauce in broiler pan over rabbit.

Serves 4

Until next time, Happy Cooking!  : )

"An investment in knowledge pays the best interest." — Benjamin Franklin

As a book blogger/reviewer, dedicated bibliophile, and just plain serious reader, I have way too many books around here.  Therefore, it is necessary to start clearing some of these bookshelves around here.  For the next few weeks, I will be doing a couple of book giveaways a week.  The giveaways will begin each Sunday and end on Friday of that week.  These books are my VERY CAREFULLY read review copies.  So, technically, they are used, but you can hardly tell it.  Ask anyone in my family; I'm a nut regarding the way I read books.  I try not to open them too widely,or leave them splayed open, and I never!!! fold pages down.  Yes, I have issues, but it's going to pay off for some of you. : )

The Jesus We Missed by Patrick Henry Reardon

In his latest work, Pastor Patrick Reardon, noted theologian and scholar, examines the humanity of Christ.  By an exhaustive study of the Gospels, narrated by those who knew Him best, Reardon discovers for us the human, earthly Jesus who walked the shores of Galilee with his disciples.  While in no way denigrating or ignoring the deity of Christ, this work seeks to bring Him to life as only those who knew him "in the flesh" could have seen.  The author presents Jesus as "of one being with the Father" - one person, not two- not part God, part man, but completely both, at once.
