LOW CARB THURSDAY-LEMON SAUTEED SQUASH

LEMON SAUTEED SQUASH
adapted from "The Weight Watchers Complete Cookbook & Program Basics, 1994 

2 tsp extra virgin olive oil
3 summer squash, sliced
1 Tbsp lemon juice
1/4 tsp dried thyme
1/2 tsp lemon pepper
2 Tbsp fresh cilantro, chopped

Heat oil over medium heat in skillet. Add half the squash.  Cook until tender, stirring occasionally.  Remove from skillet.  Add remaining squash to skillet.  Cook until tender, stirring occasionally.  Return first batch of squash to skillet.  Sprinkle with lemon juice, thyme, and lemon pepper.  Serve immediately.
