Mojo Baked Chicken

6 Boneless Skinless Chicken Thighs
3 Boneless Skinless Chicken Breasts
1/3 c soy sauce
2 T lime juice
2 T Mojo Criolllo Marinade
1/4 t onion powder
1/4 t garlic powder
1/4 t poultry seasoning
1 T dried parsley flakes
olive oil cooking spray

Spray baking dish with cooking spray.  Place chicken pieces in baking dish.  Combine seasoning ingredients in bowl and pour half over chicken, turn chicken, and pour second half over chicken.  Cover and marinate 2 hours in refrigerator.  Preheat oven to 375 hours.  Bake, covered, 20 minutes each side at 375 degrees until juices run clear.

The South's Best Butt




Southern Living recently ran an article listing their opinion of the  20 best barbecue joints in the South.  And yes, that was their real title.  It was just too good not to copy and paste.  A title like that comes along only once in a lifetime.  : )    Read their list, see if you agree with their opinions, and if you get the chance, go check out some of their picks.  I know I intend to.  But so you don't have to wait, here is my reply to their list:

I already added my agreement to another comment, but I just have to say this again. I can't believe you didn't list Moonlite in Owenboro! Everyone in the South eats at Moonlite! Bill Clinton ate there! Lord, you pull into Owensboro, you start smelling that smoke, and your car just naturally turns that direction. I need to get home more often.....
