POLLO ASADO A LA PARRILLA (BROILED CHICKEN)



Pollo Asado a la Parrilla (Broiled Chicken)

6 bone-in chicken thighs
1/2 C extra-virgin olive oil
2 Tbsp vinegar
2 Tbsp Adobo
1 tsp oregano
1 tsp garlic powder
olive oil cooking spray

Mix olive oil, vinegar, Adobo, oregano, and garlic powder.  Place chicken in lidded bowl.  Pour marinade over chicken.  Cover and refrigerate for at least one hour.  Set broiler on High.  Spray broiler pan with cooking spray.  Place chicken pieces on pan; reserve marinade.  Broil 15 minutes; turn pieces over and baste with marinade.  Broil additional 15 minutes; turn and baste once more.  Broil 5-10 minutes more, until chicken is desired shade of doneness.  Always check to make juices run clear.
