SALMON CASSEROLE

Well, we're STILL climbing over boxes and living in a maze.  That means we're also still eating what ever is  in the pantry.  Good times.....  Anyway, we had a can of salmon and we've had enough salmon croquettes lately.  So, something else had to  be  done.   This is the result.....

SALMON CASSEROLE

2 c elbow macaroni
1/4 c butter, softened
1 Tbsp extra virgin olive oil
1 small onion, minced
1 - 14.75 oz. can salmon, drained
1 Tbsp red wine vinegar
2 C shredded Cheddar cheese
2 eggs, beaten
2 c milk
1/2 c vegetable stock
2 c frozen mixed vegetables
Kosher salt, to taste
Freshly ground black pepper, to taste
3 Tbsp seasoned bread crumbs
3 Tbsp shredded Parmesan

Preheat oven to 350 degrees.  Spray baking dish with cooking spray.  Cook macaroni; drain.   Pour macaroni into large bowl; stir in softened butter. 

Heat the olive oil in a cast iron skillet.  Saute the onion in the oil until tender.  Stir in the salmon and cook 5 minutes.  Add red wine vinegar  and set aside to cool.  

Mix cheese, eggs, milk, and vegetable stock in a large mixing bowl.  Add the salmon mixture, frozen vegetables, and macaroni.  Stir to mix.  Salt and pepper to taste.    Pour mixture into baking dish. 

Mix bread crumbs and Parmesan.  Sprinkle over mixture.  Bake for 45 minutes.
