EASY SLOW COOKER RED BEANS & RICE
2 C dried red beans
6 C water
1 C chicken stock
8 oz. country ham pieces
4 oz. diced ham
8 oz. smoked sausage, chopped into bite-size pieces
1 onion, minced
1 clove garlic, minced
1/2 tsp Cajun seasoning
1 can diced tomatoes
1 green bell pepper, chopped
1 tsp salt
Soak beans in cold water overnight. Drain and rinse. Place in slow cooker with water and chicken stock. In cast iron skillet, saute ham pieces, ham, sausage, onion, garlic, and bell pepper until onion is tender. Add to slow cooker along with tomatoes, salt, and seasoning. Cook on HIGH for 4-5 hours or LOW 8-9 hours. Serve over white rice.
