FIRST COOKING POST OF 2013: RED VELVET CHEESECAKE



Belated Happy New Year!  Welcome to 2013!  Because our family is spread out in different states, Christmas is an extended holiday for us, and this is the first chance I've had to write a food post in the New Year.  So, although Christmas may already be fading into the distance for you, here at my house, we feel as though it just happened.  

Did you try any new recipes this Christmas?  I know that it's usually considered to be safer to try things out in advance, but I couldn't withstand temptation when I found this recipe.  We love cheesecake, and we love Red Velvet Cake, so the idea of combining the two was just too good to miss.  Now, as I've said before, my cakes don't always look pretty, but as long as they taste good, I'm happy enough.  It was to-die-for good, so I was VERY happy!  :)

Red Velvet Cheesecake

For the Crust:
1 ½ cups chocolate graham cracker crumbs
¼ cup butter, melted
1 TBSP granulated sugar

For the Filling:
3 (8 ounce) packages cream cheese, at room temperature
1 ½ cups granulated sugar
4 large eggs, lightly beaten
3 TBSP unsweetened cocoa
1 cup sour cream
½ cup whole buttermilk
2 tsp vanilla extract
1 tsp distilled white vinegar
2 (1 oz) bottles red food coloring


For the Topping:
1 (3 ounce) package cream cheese, at room temperature
¼ cup butter, at room temperature
2 cups powdered sugar
1 tsp vanilla extract

For the Crust:
 Stir together graham cracker crumbs, melted butter and 1 TBSP sugar; press mixture onto bottom of a 9-inch springform pan.

For the Filling:
 
Beat together cream cheese and sugar at medium low speed with an electric mixer 1 minute.
Add eggs, unsweetened cocoa, sour cream, buttermilk, vanilla extract, vinegar and food coloring.  Mix on low speed just until fully combined.  

Pour batter into prepared pan.  Bake at 325F for 10  minutes, reduce heat to 300F, and bake for 1 hour and 15 minutes or until center is firm.Run knife along outer edge of cheese. Turn oven off and let cheesecake stand in oven 30 minutes.
 
Remove cheesecake from oven; cool in pan on a wire rack for 30 m minutes.  Cover and chill for 8 hours.

For the topping:
 
Beat cream cheese and butter at medium speed with an electric mixer until smooth; gradually add powdered sugar and vanilla, beating until smooth.  

Remove cheesecake from refrigerator and spread topping evenly over top of cheesecake.  Remove sides of springform. Garnish if  desired.

One thing to always remember:  when baking, if a recipe calls for cream cheese, the whipped cream cheese spread will NOT work.  The two products are not interchangeable in this case.  You can sometimes make the substitution when dealing with dips or spreads, but cheesecake needs cream cheese.  Trust me; I looked it up on the Kraft website.

2013 A-Z Reading Challenge

 


Do you love to read?  You know I do!  Escape with Dollycas Into a Good Book is hosting a reading challenge for 2013.This challenge will run from January 1st, 2012 until December 31st, 2013.

You can join anytime. It’s an alphabet challenge!!! The challenge is to read one book starting with every letter of the alphabet. 


So there are two different ways you can set up your own A-Z Reading Challenge.


A -  Make a list on your blog from A-Z. Throughout the year, as you go along, add the books you are reading to the list. Towards the end of the year, you can check and see which letters you are missing and find books to fit.


OR


B - Make a list now of 26 books, picking one for each letter of the alphabet. For example: A – The Azalea Assault B- Blue Monday C – Crops and Robbers D – A Deadly Grind etc.



Books can be read in any order and all formats – print – e-book – audio – are acceptable for this challenge!
