2 Tbsp extra-virgin olive oil
1 red onion, peeled and sliced
6 oz. chorizo sausage, broken into pieces
2 C chicken stock
1 can Great Northern beans, undrained
1/2 butternut squash, peeled and chopped
1 tsp Adobo
1 can petite diced tomatoes
1 C kale, chopped
Heat olive oil in large pan to medium heat. Cook onion and sausage until onion is tender. Add kale, stock, beans, squash, Adobo, and tomatoes. Bring to a boil; reduce heat, cover and simmer 30 minutes.
Serve with tostones.
