WEEKEND BREAKFAST SKILLET

If necessity is the mother of invention, boredom must be a close relative.  While going through laptop withdrawal this past week, I sat around and thought up recipes.  We tried this one for breakfast this morning and found a winner.  I forgot to take pictures, but really, I think you can imagine this one without my help.  As for the sausage, I used Jimmy Dean® Regular Pork Sausage, but you can use whatever brand  you like.  As for the hash browns, good ol' Great Value shredded hash browns worked just fine. 
WEEKEND BREAKFAST SKILLET

1 lb. breakfast sausage
4 eggs
2 c. frozen shredded hash browns
1/4 c. chopped onion
1/4 c. chopped red bell pepper
1 c. shredded cheddar cheese
Cooking spray

Spray skillet with cooking spray.  Crumble sausage in skillet and cook until no longer pink, stirring frequently.  Whisk eggs in bowl; pour into skillet.  Continue to stir egg/sausage mixture.  Add hash browns, onion, and pepper.  Cook until sausage is brown and eggs are set.  Cover mixture with cheese and place skillet under broiler 1 minute.

Serves 4

It occurs to me that I should have told you in the beginning that you need an oven-safe skillet.  You probably figured that out by now, but just in case, now I've told you.  : )

I bet you thought I forgot the music to cook by, didn't you?  Don't be silly!  I just couldn't work it into the first paragraph.  This will wake you up!
