CANDIED SWEET POTATOES

We're still recuperating from our Thanksgiving road trip, so I haven't cooked anything blog-worthy the last couple of days.  In my family, we always had the same menu for Christmas as we had for Thanksgiving, so for all the others out there with the same tradition (we can't be the only ones, can we?) here is another one of my Thanksgiving dishes.  For some reason, we always feel obligated to put sweet potatoes on the table, and yet, hardly anyone ever eats them.  I know the marshmallow version is popular, but that's been done to death.  This year, I had no intention of cooking them in any form, and Mom pulled out a can and said we had to because . . . well, I don't remember why we had to, but we did.  Anyway, not having the ingredients ready for the casserole with the pecans on top, I just threw something together, and IMHO, it turned out rather well.

CANDIED SWEET POTATOES

1- 40 oz. can sweet potatoes, drain and reserve syrup
1/2 c butter
1 c brown sugar
2/3 c syrup from can
1/3 c orange juice
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp vanilla extract

Mix all ingredients in a large saucepan. Bring to a boil.  Place in baking dish and cover.  Bake in preheated oven at 350 degrees for 1 hour.
