MOM'S MEATLOAF (THE NIGHT BEFORE THANKSGIVING)

My mom and I have been cooking today, and the last thing we wanted to do was stop to cook dinner.  This morning I mixed up enough Broccoli Salad for today and tomorrow, Mom defrosted her meatloaf she froze last week and popped it into the oven in time for dinner, while we kept working on tomorrow's food.  I don't know if she intended to share her recipe with the world, but hey!  any recipe handed to me is fair game.   I didn't take time to take a picture, but the next time one of us makes this, I'll upload one then. Oh, BTW, did I mention it was delicious?

MOM'S MEATLOAF

1 lb lean ground beef
1/2 c salsa
1/2 c Italian seasoned bread crumbs
1/2 c shredded Cheddar cheese
1 egg, beaten
3 cloves garlic, minced
salt, pepper, and dried parsley to taste

1/2 c ketchup
2 Tbsp brown sugar

Preheat oven to 350 degrees.  In a large bowl, mix the beef, salsa, crumbs, cheese, egg, and garlic.  Stir in seasonings.  Mold into a loaf shape in a large baking dish with room to spare.  Bake 45 minutes. Mix ketchup and brown sugar.   Remove meatloaf from oven and carefully drain as much grease from pan as possible.  Cover with sauce and return to oven for 10-15 minutes.  Let the meatloaf set a few minutes before removing from dish and slicing.
