SLOW COOKER BEEF MARSALA

We love pasta.  We love it tooooo much, as a matter of fact.  Pasta and rice are the reasons we have trouble going  completely low-carb.  But if we're going to eat pasta, it might as well be easy to prepare.  And you know how I love my slow cooker.  This recipe was a wonderful little discovery.  A salad, some garlic bread, and we're finished.  

SLOW COOKER BEEF MARSALA
adapted from The Dancing Cook

4 TBSP olive oil
2 - 2 1/2 lbs beef stew meat
4 TBSP all-purpose flour
8 garlic cloves, crushed
1 1/2 C marsala
1 C chicken broth
1 can cream of mushroom soup
1 can cream of mushroom with roasted garlic soup
1- 8oz. pkg sliced mushrooms
Kosher salt, to taste
Freshly ground black pepper, to taste

In a skillet, heat olive oil on medium heat.  Add beef and saute until browned.  Saute garlic until lightly browned.  Add flour and toss until well coated.  Transfer meat mixture into slow cooker.  Add Marsala, broth, soups, and mushrooms.  Cook on High 5 hours.   Add salt and pepper to taste.  Serve with or on fettuccine.
