Another week; another Puerto Rican recipe. And you thought I had taken a break from cooking! No, just had a few bad days, but I'm baaaaacckkkk....For once, we're cooking with pork. Other than the celebratory Pernil, and those wonderful Garlic Pork Chops, I don't tend to cook a lot of pork. Jorge eats bacon every morning, and I think that's enough for anyone. But today's recipe is too good to ignore. If you don't like to eat pork too often, I understand, but ya gotta try it every now and then. And the eggplant makes you feel good about yourself because you're eating a vegetable that you probably don't eat very often.
Carne de Cerdo Guisado con Berenjena (Pork Stew with Eggplant)
adapted from "SOFRITO - The Essence of Puerto Rican Cuisine"
2 1/2 lbs. pork stew meat
3 Tbsp recaito
1 - 8 oz. Spanish-style tomato sauce
1 1/2 c water
1-2 eggplants, peeled and diced
Adobo, to taste
In deep cast iron skillet or Dutch oven, heat oil to medium heat. Cook pork until lightly browned. Add recaito and tomato sauce; simmer 5 minutes, stirring frequently. Add water, eggplant, and Adobo and bring to a boil. Cover, lowering heat to low. Cook 30 minutes. Serve with white rice.
Serves 6-8

SPRING CLEANING BOOK GIVEAWAYS
