BROILED EGGPLANT
adapted from "The Weight Watchers Complete Cookbook & Program Basics, 1994
1/2 c finely chopped campari tomatoes
3 Tbsp balsamic vinegar
1 Tbsp dried basil
1 garlic clove, minced
1 small eggplant, sliced
Kosher salt, to taste
Freshly ground black pepper, to taste
Olive oil cooking spray
Preheat broiler. Spray broiler pan with cooking spray. whisk tomato, vinegar, basil, garlic, salt and pepper in a small bowl. Arrange eggplant slices on broiler pan. Brush slices with tomato mixture. Broil 8 minutes. Turn slices and brush with more of the tomato mixture. Broil 3 minutes. Serve immediately.

SPRING CLEANING BOOK GIVEAWAYS
As a book blogger/reviewer, dedicated bibliophile, and just plain serious reader, I have way too many books around here. Therefore, it is necessary to start clearing some of these bookshelves around here. For the next few weeks, I will be doing a couple of book giveaways a week. The giveaways will begin each Saturday and end on Friday midnight of that week. Unless otherwise noted, these books are my VERY CAREFULLY read review copies. So, technically, they are used, but you can hardly tell it. Ask anyone in my family; I'm a nut regarding the way I read books. I try not to open them too widely,or leave them splayed open, and I never!!! fold pages down. Yes, I have issues, but it's going to pay off for some of you. : )
