LOW CARB THURSDAY - LEMON SAUTEED GREEN BEANS WITH PARSLEY & GIVEAWAY LINK

Since we've been doing Low Carb Thursday, Jorge & I  have been eating a little healthier.  But one thing we have trouble with, and I swear it's all his fault, is eating enough vegetables.  Seriously, he's not real crazy about too many vegetables, and when we met, he would not touch a salad.  Of course, I have made progress with him. ; )   But I figure we're not the only ones who don't want to eat their veggies, so today's recipe is a vegetable recipe.  And it's very simple, it's tasty, really, eat your veggies; I swear, they're good AND they're good for you!  

LEMON SAUTEED GREEN BEANS WITH PARSLEY
adapted from "The Weight Watchers Complete Cookbook & Program Basics, 1994 


1 tsp extra virgin olive oil
1 garlic clove, minced
1 Tbsp onion, minced
3 C green beans, topped and tailed, and broken in half
2 Tbsp chopped fresh parsley
1 Tbsp lemon juice
1 tsp lime juice
pinch of Kosher salt
freshly ground black pepper, to taste


Heat EVOO over medium heat.  Add garlic and onion.  Stir.  Add green beans and sautee 3 minutes.  Add parsley.  Continue to cook 3 minutes; stir frequently.  Add juice and 2 Tbsp water, mixing well.  Cover and cook 2 minutes.  Uncover, stir, cook additional 2 minutes.
