WILD GAME TUESDAY -VENISON POT PIE & GIVEAWAY LINK

WILD GAME TUESDAY
You may have noticed that yesterday's post did not contain any text before the recipe.  I've been having some problems and it was just easier to post the recipe and give up on the rest.  I don't really have anything ready for today except for this explanation, so I guess it's not much better than yesterday.

VENISON POT PIE

2 slices round steak, 2 lb, cut 3/4 in thick
3 Tbsp flour
2 1/2 tsp salt
1/8 tsp pepper
1/3 c shortening
3 1/2 c water
1/4 c thickly sliced carrots
1/2 c coarsely cut celery
2 c frozen peas
2 Tbsp chopped onion
1/4 tsp sugar
Biscuit dough
butter, melted

Cut steaks into 1 1/2 inch pieces and dredge thoroughly with the combined flour, salt and pepper.  Slowly brown meat and any remaining seasoned flour in the hot shortening.  Reduce heat, add 1 c of the water, cover and simmer for 1 1/2 hr or until meat is nearly tender.  Add remaining water gradually as needed, then the vegetables and sugar and continue cooking covered for 1/2 hr or until vegetables and meat are tender.  Pour boiling stew into two caseroles (4 1/2 c capacity each.).  Immediately top with biscuit dough rolled to 1/2 in thickness.  Flute edge and brush with butter.  Cut vents in the center.  Bake at 450 degrees for 12 to 15 minutes or until crust is cooked through and richly browned.

Serves 8 to 10
