ASOPAO de CAMARONES (SHRIMP STEW)

SuperHubby cooked dinner tonight.  I had two doctor's appointments, and it was my parents'  last night here, so he took it upon himself WITHOUT BEING ASKED to fix dinner for everyone.  That's the true test.  It doesn't count as much when they do it with a sad sigh and an eyeroll because you've asked them to do something.  It was delicious, and just like always, when I asked him what he did, it was a little of this, a little of that.....

ASOPAO de CAMARONES (SHRIMP STEW)

1-2 lbs shrimp
Adobo, to taste
2 Tbsp olive oil
1/4 C recaito
1/2 tomato sauce
3/4 C  medium grain rice
4-5 C vegetable stock
1/2 C pimiento
1/4 C cilantro
kosher salt, to taste
Dash of dried basil
dash of onion powder
1 cube shrimp bouillon

Season shrimp with Adobo; set aside.  In a pot, heat olive oil.  Add recaito and tomato sauce.  Wait   2-3 minutes, add vegetable stock,shrimp bouillon,  rice, pimiento, cilantro, salt, basil, and onion powder.  Cook 20 minutes; add shrimp.  Add 2 c water; continue to simmer 15 minute longer.
