In celebration of National Cheesecake Day, I have decided to post this recipe for Guava Cheesecake. I may not find time to make this today, but I have in the past, and it is ¡muy delícioso! The frozen guava juice concentrate may be a little difficult to find, but if it is not available at places like Wal-Mart or Kroger in your area, try any specialty or Hispanic markets nearby.
GUAVA CHEESECAKE
(Adapted from A Taste of Puerto Rico by Yvonne Ortiz)
CRUST
4-oz. vanilla wafers, crushed
2-Tbsp butter, melted
FILLING
1 1/2 -lbs. cream cheese, softened
6 eggs
1 C frozen guava juice concentrate, thawed
3 Tbsp sugar
4 Tbsp all-purpose flour
Preheat the oven to 400 degrees. Mix the wafer crumbs with the butter. Press into a springform pan. Refrigerate while mixing the filling.
Beat the cream cheese until fluffy. Add eggs one at a time. Beat until egg/cream cheese mixture is light. Add concentrate, sugar, and flour; beat until well mixed.
Pour batter into pan. Bake for 1 1/2 hours, or until a knife inserted in the center comes out clean. Cool at room temperature. Refrigerate for at least 1 hour before serving.
