VEGETABLE RICE



As I write this, it's the first day of Spring.  Yay!  I am soooo excited!  It's my first Kentucky Spring in several years, and the first one in our new Kentucky home with SuperHubby.  So, although we experienced a record low temp today (in the 20's)  and some reported snow flurries in the area, Spring is around the corner.  The grass is getting greener, the Easter lilies have been blooming, and there's just a feeling in the air. 

One reason we're excited this year is that we're planting our first garden.  Actually, SuperHubby has already started on it.  Not outside, of course, but in the basement.  I should have taken pictures to show you.  He has dirt-filled styrofoam cups lined up down there with seeds planted in each one.  He already has tomatoes, cucumbers, and squash sprouting out.  We're very excited.  We go check on them periodically, and we're counting the days until we get to transfer them outside.


 VEGETABLE RICE

1 Tbsp vegetable oil
3 C chicken or vegetable stock
2 C rice
1/4 tsp garlic salt
1 green onion, minced
1/2 C spinach, chopped
1 celery stalk, diced

Using a caldero or Dutch oven, heat oil over medium heat.  Add stock; bring to a boil.  Stir in rice.  Turn the rice down to low.  When the liquid has evaporated until it is level with the rice, add the remaining ingredients, stir once, put the lid on and turn heat as low as possible.  Let rice simmer approximately 20 minutes.  Leave rice alone until finished.

This recipe can be vegan with veggie broth. Sounds good. Thanks for The Lumineers, I love them!

Thanks for stopping by and commenting. Yes, Teddy, one of the reasons I congratulated myself on this one (yes, I do pat myself on the back occasionally) was the idea of using vegetable stock in lieu of chicken or beef. While I can't get Jorge to give up meat, I am attempting to slip in vegetables and vegetarian dishes whenever possible. And I'm glad you liked the music; I like them too. :)
