As I have mentioned before, growing up in Kentucky, we ate fried salmon patties. And the "L" in salmon was pronounced. But over the past few years, I have realized that much of our diet was unhealthy. One of the first things to disappear from our table was fried salmon patties. After searching the Internet and experimenting with recipes, we started eating Baked Salmon Croquettes, and yes, we like them. But in the interest of variety, I decided to try a new recipe for a healthier version of fried salmon croquettes. To be honest, the flavor is about the same, but the texture is a little different. They're both good.
SOMEWHAT HEALTHY FRIED SALMON PATTIES
Adapted from Food & Whine
1 can (14.5 oz) Alaskan pink salmon, drained
1 1/2 c dry bread crumbs
2 tbsp mayonnaise
2 tbsp dijon mustard
1 tbsp lemon juice
1 egg, beaten
1/4 cup diced red bell pepper
1/4 diced onion
1/2 tsp fresh rosemary, chopped
1/2 tsp fresh thyme, chopped
1/2 tsp Kosher salt
Olive oil cooking spray
Mix all ingredients in a bowl. Form into patties. Spray frying pan liberally with cooking spray; heat pan on medium heat. Cook patties until lightly browned on each side. Check patties carefully before flipping; if you flip too soon, they fall apart; wait too long, and they stick. Trust me on this one. Since I have a tendency to make large patties, this recipe made 5 patties. Obviously, if you make them smaller, you will have more patties. It's all in the eye of the beholder.
