CAJUN BAKED CHICKEN

As I mentioned lately, I have developed an interest in Cajun flavoring.  Of course, we still try to eat healthy at least part of the time.   Baked chicken, while good for you, can be bland if you're not careful.  Now, this recipe is not authentic Cajun, but it is healthy, tasty, and relatively simple.  Some days simplicity is the important factor, isn't it?  Today was one of those days.  Not that I actually cooked this recipe today; I just wanted to make that point.  After spending the day working on my blog/Twitter account/Facebook page, I don't care if I ever see food again.  But you're going to pretend I didn't say that, right?  Anyway, a few days ago, we had Cajun Baked Chicken for dinner, and even though I didn't take pictures, it will have to suffice as today's post.  BTW, if you like really spicy foods, you'll need to increase the amount of seasoning.  

CAJUN BAKED CHICKEN

6 chicken pieces
1 c plain bread crumbs (I used Great Value brand from Wal-Mart)
1 c Panko bread crumbs
2 Tbsp melted butter
2 tsp McCormick Perfect Pinch® Cajun Seasoning

Combine crumbs and seasoning. Dip chicken pieces in butter, then in bread crumb mix. Place each piece on a greased baking sheet. Drizzle remaining butter over chicken. Bake uncovered at 350 degrees for 1 hour.
