EASY SLOW COOKER RED BEANS AND RICE

Well, so much for the change of seasons.  The temperatures went back up into the 80's today, and the air conditioner came back on.  Unfortunately, my taste buds are wanting cold weather foods, and they will not be denied.  Still on the Cajun kick, I decided to try an easier method of cooking red beans and rice.  Of course, my favorite kitchen appliance is still the slow cooker, so that was the route I took again today.

EASY SLOW COOKER RED BEANS AND RICE

1 lb smoked sausage or kielbasa, cut into small pieces
2 cans red kidney beans, undrained
1 green bell pepper, chopped
1 tsp jalapeno, minced
1 can diced tomatoes, undrained
1/2 onion, chopped
3 cloves garlic, minced
1/4 tsp Cajun seasoning
Kosher salt, to taste
Freshly ground pepper, to taste
1 bay leaf

Combine all ingredients in slow cooker.  Cook on low 4-5 hours.  Remove bay leaf. Serve with white rice.
