While everyone is doing their Christmas baking and cooking, I'm not. To be perfectly honest with you, I'm feeling a bit overwhelmed this year. It's just a personal issue, and I'll deal with it in time for the holidays, but today, I'm just not ready to post any wonderful Christmas recipes. Instead, here is one of our favorite ways to have shrimp. I usually serve this tossed with angel hair or fettuccini. A nice salad and warm garlic bread and you've got a wonderful meal!
BROILED SHRIMP
1 ½ lb. shrimp
½ C olive oil
1 Tbsp lemon juice
1 tsp salt
1 Tbsp parsley
Ground pepper
1 garlic clove, minced
1 tsp oregano
Shell and devein shrimp. Mix all other ingredients in a large bowl and add shrimp to marinate for one hour. Preheat broiler. Place shrimp in large shallow pan with marinade and broil 3-4 minutes each side. Serves 4

I am with you, Tammy! Sometimes the holidays can feel so overwhelming. And with all the classic holiday cooking and baking...you just need to step out and do something else! This shrimp sounds wonderful, simple and perfect for a switch up at this busy time! : )
