We finally got around to putting up our Christmas tree today, and at our house Christmas means coquito. For those of you who are unfamiliar with coquito, as I was before I met Jorge, the best explanation is that coquito is Puerto Rico's answer to eggnog. And a very good answer it is. I have never been a fan of eggnog, but I looove coquito! Everyone has their own recipe, so as far as I know, there is no official recipe. Today, I will share two recipes. Traditionally, coquito is flavored with rum, but for those of you who, like me, were raised teetotallers, I have a non-alcoholic version as well. It's still delicious and safe for the little ones.
COQUITO
2 cans evaporated milk
1 can sweetened condensed milk
1 can Coco Lopez ® Cream of Coconut
1 tsp vanilla extract
1 c coconut rum
1/4 c cognac
2 tsp cinnamon
1 tsp nutmeg
Pour all ingredients into blender and mix well. Keep refrigerated. When serving, sprinkle with additional cinnamon.
NON-ALCOHOLIC COQUITO
2 cans evaporated milk
1 can sweetened condensed milk
1 can Coco Lopez ® Cream of Coconut
1 c rum flavoring or extract
2 tsp vanilla extract
2 tsp cinnamon
1 tsp nutmeg
Pour all ingredients into blender and mix well. Keep refrigerated. When serving, sprinkle with additional cinnamon.
Leave a glass for Santa this year. He'll be so happy he may leave you an extra gift! |
Traditionally, this is served in small cups or shot glasses. All this does is ensure that the hostess will be kept busy refilling everyone glasses. I say use a larger glass and get it over with. :)
Until next time, Happy Cooking and Feliz Navidad! : )
A lovely thing about Christmas is that it's compulsory, like a thunderstorm, and we all go through it together. - Garrison KeillorTAGS: coquito, Puerto Rican, holiday\
