This week is Clean Out the Freezer and Pantry week, which can lead to some interesting meals. Fortunately, last night's turned out well. I found a package of frozen cheese tortellini and a package of frozen meatballs, canned tomatoes and beans in the pantry, and from that we got soup. We've actually been having a little cold spell down here in Florida, so a bowl of hot soup and a slice of warm garlic bread really hit the spot. And it was so simple it was embarrassing.
MEATBALL SOUP
4 c chicken broth
1 pkg (13 oz.) frozen cheese tortellini
30 frozen meatballs
2 cans cannellini beans
1 can Italian diced tomatoes
1 1/2 tsp dried basil
1 Tbsp red wine vinegar
1/2 tsp oregano
shaved Parmesan cheese
freshly ground pepper
Bring chicken broth to a boil in a large stockpot. Add tortellini and meatballs. Cover and let simmer 10 minutes, stirring frequently. Stir in beans, tomatoes, basil, vinegar, and oregano. Bring to a boil again. Reduce heat; cover and let simmer 30 minutes, stirring occasionally. Top with Parmesan and pepper, if desired.

Some days I can barely write my shopping list! lol A book is not in my future.
