WILD GAME TUESDAY: BARBECUED VENISON TENDERLOIN

If you are not a basketball fan, or your TV went on the blink last night, or perhaps you're not from the U.S. and/or just don't care, but my beloved University of Kentucky Wildcats won the Final Four!  2012 NCAA Men's Basketball National Champions, baby!  GO BIG BLUE!!!!!!!!!!!!!

And now, on to the cooking.  You know, the purpose of this blog.  I'm just still a little buzzed by the game last night.  But I'll shut up and post the recipe, and tomorrow, I promise to be back to normal again.  : )

BARBECUED VENISON TENDERLOIN

1 deer tenderloin, 1 1/4 lb
2 Tbsp butter or shortening
Sauce:
1 c ketchup
2 Tbsp grated onion
1/2 c chopped celery
1/2 c water
2 tsp vinegar
1 1/2 tsp salt
1/4 -1/2 tsp Worcestershire sauce, to taste

Cut tenderloin into slices 1 3/4 in. thick (about 6 slices).  Trim off any strong fat or tough membrane.  Heat butter in a skillet and brown slices of deer quickly.  Meanwhile, combine remaining ingredients and pour over hot meat.  Place uncovered in 350 degree oven for 1 hour.  Baste meat occasionally with the barbecue sauce and turn once during the baking.

Serves 6
